Haha, not an owner, but booked a 1 bedroom over Labor Day and was excited it was open. Can't wait to go back. I miss Hilton Head Social Bakery sandwiches and Nectar chilaquiles. Plus, sitting in balcony rocking chairs.
Unfortunatley, the Plan Disney site says bell services will only hold on check in and check out day. So I would be worried leaving it during the cruise: https://plandisney.disney.go.com/question/staying-disney-world-resort-disney-cruise-next-year-bell-622251/
If you already have the contracts without the points, it should be very soon now. within a week or two, hopefully less. Your milage may very, but sometimes you can get on the chat and ask and some cast members are able to load them faster.
The waitlist will sadly only allow you to replace one. I wonder if you called, if Member Services would have any better capabilities to have it replace both for you.
Jazz Kitchen is one we always go back to. There is a place in the Westin (off property but a short walk) called Puesto that we loved.
I really want to try 24 Pho Hour and now that the wait time isn't insane, we'll have to go. We love Portillos and Hash House a Go go was fun. My current favorite off property places are Crooked Spoon and Salt Shack in Clermont, Hangry Bison, Whole Enchilada, Aj's Pizza, and Servando's in Winter Garden, and Rocco's Taco

We did My Time Dining once and haven't gone back to it since. I always stick with the late dining time now and if we don't want to go, we head to the buffet. Thanks for sharing! The cruise will be amazing. And 50th state! How impressive. Skagway and Ketchikan are both great and you'll love Glacier day. Can't wait to hear all about it. Alaska is our favorite place to travel!

Would you be able to ride Stardust? lol I doubt it. I'd totally go to Oak & Star, Pizza Moon, or The Atlantic and watch the fountain show at night.
We have always found Uber/Lyft to be easy when flying into any Disneyland airport. We have done LAX and SNA several times and Long Beach once too.
